BAKED CHEESECAKE

Baked cheesecake: simple, but so good! It’s called cheesecake, but it has nothing to do with real cheese, just cream cheese. It has a very fresh taste.

Ingredients

  • Some butter
  • Puff pastry
  • 1 kg fresh cheese (cream cheese)
  • 200 ml cream
  • 250 g Zùsto
  • 3 tbsp flour (Alternatively, you can use 1.5 tbsp coconut flour)
  • 5 eggs
  • baking tin 26 cm

Method

  1. Separate the egg yolk from the white. Put the egg white aside for now.
  2. Mix the egg yolks with the cream cheese, cream, Zùsto and the flour, mixing it evenly.
  3. Beat the egg whites.
  4. Add the egg white to your mixture and stir softly through with a spatula.
  5. Grease a 26 cm cake tin and put the puff pastry in it.
  6. Pour your mixture in.
  7. Bake for 15 minutes at 200°C and then for 80 minutes at 120°C.
    The baking times may be a little longer depending on your oven. If it’s baked properly, it won’t shake too much if you softly rock the cake tin. (I remove the ring from the baking tin for the last 30 minutes so the puff pastry can bake nicely all the way around.)
  8. Let it cool, then put it in the fridge. It has to be cold when you serve it.
