CAKE WITH PEACH

SIN (HEALTHY FOOD MAKES YOU FEEL GOOD)

A fresh cake with peach slices, blueberries and grated coconut. This cake not only caresses the tongue, it’s easy on the eye too.

Ingredients

For 1 round cake

  • 150 g Zùsto
  • 150 g self-raising flour
  • 120 g butter
  • 100 g blueberries
  • 2–3 peaches in thin slices
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • A pinch of baking salt
  • Optional: Topping of your choice (grated coconut, almond flakes, etc.).

Method

  1. Preheat the oven to 180°C.
  2. Line a cake tin with baking paper.
  3. Slowly melt the butter in a pan. Mix the melted butter and the Zùsto in a bowl and add the eggs and the vanilla extract. Mix it all together until the eggs are well mixed.
  4. Add the self-raising flour, baking powder and a pinch of baking salt. Stir everything until it is smooth, then scoop the mixture carefully into the cake tin.
  5. Wash the fruit and cut the peaches into thin slices. Decorate the cake with the blueberries and peach slices.
  6. Do you like things sweet? Sprinkle a little extra Zùsto over the cake.
  7. Put the cake tin in the oven for approximately 30 minutes.
  8. After about twenty minutes, test the cake with a skewer. If needed, allow it to continue baking for another ten minutes or so. If there is no dough on the skewer, the cake is ready.
  9. Let the cake cool and sprinkle it with grated coconut and other toppings of your choosing. Enjoy!

Thanks to my travel adventures, I’ve already been able to marvel at plenty of beautiful places and taste many cuisines from around the world. The oriental kitchen has stolen my heart, but Flemish classics give me incredible nostalgia. This is why I find it wonderful to experiment with different cuisines and give them my own twist.

Why Zùsto?
As a big foodie, I love food, but my body and my health aren’t always quite so happy about this. As such, I’ve become a huge proponent of healthier alternatives.

Besides the fact that, with Zùsto, I have a healthier sugar substitute in the house, I’ve found another huge plus point is that you can use it to replace sugar on a 1:1 ratio in every recipe. So, from now on, there are no more complicated calculations! Easy peasy!
