CHOCO-COCONUT MUFFINS

These choco-coconut muffins have a delightfully fresh taste thanks to the buttermilk and coconut. The muffins are completely sugar-free thanks to the sugar substitute Zùsto. Enjoy it, guilt-free!

Ingredients

  • 185 g butter at room temperature
  • 180 g Zùsto
  • 2 eggs
  • 235 g flour
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • 125 ml butter milk
  • 185 g dried coconut

Method

  1. Preheat the oven to 180°C.
  2. Grease a muffin tin or use cupcake papers.
  3. Mix the Zùsto and the baking powder in a bowl.
  4. In a different bowl, use a mixer to beat the butter into a fine mixture.
  5. Beat the eggs into the butter one by one, and then add the vanilla essence.
  6. Add a little bit of the flour/Zùsto mixture, then a little bit of buttermilk, mixing it through the butter/egg mixture. Keep adding little amounts until it is all mixed in.
  7. Mix in the coconut and the cocoa powder.
  8. Add the mixture until every muffin cup is about three-quarters full.
  9. Bake for 25 to 30 minutes in the oven.
  10. Allow your muffins to cool for 15 minutes in the tin, then put them on a cooling rack.
