CINNAMON ROLL BITES

Ingredients
Makes 4 serves

  • 150 g almond flour. You can also blend 150 g of almonds into flour.
  • 100 g spelt meal, spelt flour or wholegrain flour
  • 3 tbsp natural yoghurt or Greek yoghurt
  • 2 tsp cinnamon
  • 2 eggs
  • 5 tsp Zùsto
    (You can use 5 tbsp agave syrup or honey)
  • 2 tsp baking powder
  • 50 g raisins

Method

  1. Preheat the oven to 175°C.
  2. Put the almond flour, spelt meal, baking powder, Zùsto, cinnamon and raisins into a bowl. Mix well.
  3. Put the eggs, together with the yoghurt, in a different bowl and stir with a whisk until it become a yellow mush. (Add agave syrup or honey if you’re using them.)
  4. Spoon the flour carefully through the egg/yoghurt mix and stir it into a smooth batter. Is it still too runny? If it’s still easily dripping from your spoon, add a bit more meal or flour. It needs to be a thick mass.
  5. Line the baking tray with baking paper. Spoon 4 large balls of the mixture onto the baking tray. Lightly swirl the top edge on each one from above so that you see a swirl in the mixture. Put them in the oven for about 25 minutes. Allow them to cool, then enjoy them! I finish off the cinnamon roll bites with a little honey and/or Zùsto. They will keep for three days in a closed biscuit tin.
