COOKIES WITH NUTS

For kids, baking cookies together is the ultimate in helping in the kitchen. They like to help with the kneading, mixing and shaping. And of course, they want to be there whenever there’s any tasting to be done!

Ingredients

  • 80 g soy margarine (other types of margarine are possible too)
  • 80 g Zùsto
  • 1/2 tsp vanilla extract
  • 1 egg
  • 150 g spelt flour
  • 1/4 tsp baking powder
  • A pinch of salt
  • 150 g mix of nuts, seeds and dried berries

Method

  1. Mix the flour, Zùsto and baking powder with each other. Then add the softened margarine, vanilla extract and the egg.
  2. When this has become a nice mixture, add the salt and the mix of nuts, seeds and dried berries.
  3. Make balls of equal size and weight and put them on an oven tray lined with baking paper. Bake them for 25 minutes in the oven at 180°C. Let them cool off immediately on a cooling rack. One cookie is more than enough as a snack—perfect in a picnic hamper or a lunch box.
  4. ‘Enjoy this sugar substitute—it’s more than delicious. It also gives a lovely brown colour to your cookies.’
