LEMON SHERBET

Anyone who follows my Instagram page even a little knows that I’ve been busy experimenting with my new KitchenAid ice-cream machine. Everything is delicious—but everything I’ve made has also been a genuine cream or sugar bomb! When I was asked to test Zùsto, I didn’t have any doubts I’d make some kind of ice-cream!

When life give you lemons, make sherbet! A sorbet can quickly become too sweet or too sour, but a sherbet brings all the goodness of ice cream and sorbet together. The result of this experiment? A delicious ice cream with a soft lemon flavour and a touch of cinnamon.

Serving tip: To make it a bit ‘special’, I’ve hollowed out the pressed lemon and filled it with the sherbet. Very handy, because this way, you can put it on the table and you don’t need to wait until the ice cream is ready to be spooned out.

Ingredients

  • 200 ml pressed lemon juice
  • 100 g Zùsto
  • 300 ml (soy)cream (I used Alpro Cuisine)
  • 1 tsp cinnamon powder

Method

  1. Beat the Zùsto, little by little, in the (soy) cream. Be careful, because otherwise you’ll need to start again, like me. Once the Zùsto is beaten, add the lemon juice and cinnamon powder. Stir it carefully once again.
  2. Pour the mixture in your ice-cream machine and spin it into sherbet in 20 minutes. It has a texture that falls between ice cream and sorbet.
  3. Eat immediately or store it in the freezer.

Zùsto is easy to use because you don’t need to recalculate your amounts. You just replace sugar with Zùsto. The taste is very natural too, unlike with other sugar substitutes. I was actually pleasantly surprised by the result. And in the meantime, I’ve made ice cream, brownies, cookies and cake. And they were all greatly enjoyed here! We’re fans!
