SPRING ROLL-CAKE

A light, airy roll-cake made with organic eggs from our chickens, Zùsto, Alpro® Coconut and high-quality baking flour. We filled the roll-cake with our rhubarb jam, made with Zùsto, lemon juice and coconut.
Ingredients
For the biscuit
- 120 g fine baking flour
- 1 tsp baking powder
- 4 organic eggs
- 150 g Zùsto
- 100 ml Alpro Coconut
- A pinch of salt
- Optional: 5 ml Limoncello liqueur
For the filling
- 3 stalks of rhubarb
- 75 g Zùsto
- Zest and juice of 1 organic lemon
- 1 star anise
- A pot of full-fat strawberry yoghurt
Finish
- Gelée d’Or with Belgian saffron (Le Safran de Cotchia)
- Purasana Coconut flakes
- Sweet, edible flowers; elderflowers, purple comfrey
- Fresh mint leaves
Method
- Preheat the oven to 175°C.
- Make the rhubarb jam:
o Wash and cut the rhubarb;
o Cook with the lemon juice and 75 g Zùsto;
o While cooking, add the star anise;
o Allow to cook and remove the star anise. - Beat the eggs with the Zùsto, until the mixture becomes a white foam and the Zùsto is completely dissolved.
- Mix the Alpro Coconut into the mix.
- Strain the baking flour with the baking powder, mixing it in with the eggs.
- Add a pinch of salt.
- Optional: Add 5 ml Limoncello for some extra bite.
- Roll the dough out evenly on a well-greased baking tray lined with baking paper.
- Bake for 10 minutes at 175°C.
- Remove the baked base from the baking tray. Put it onto clean towel and remove the baking paper.
- Spread the rhubarb jam and strawberry yoghurt over it. Add a few coconut flakes too. Carefully roll it up.
- Spread the Gelée d’Or with saffron on top.
- Sprinkle a few more coconut flakes and the lemon zest on it.
- Decorate with sweet, edible flowers and mint leaves.
