Vanilla cookies

Recipe by: Laurence (As Cooked by Ginger)

Everyone loves shortbread, and there’s nothing quite like that smell filling the house – yum! They also allow you to be creative. You can decorate them by dipping half of the biscuit in chocolate or by adding “chocolate chips”.

They are simple to make and really delicious. By the way, if you want to treat your colleagues/school to a party, for example, these cookies are so simple and easy that (almost) anyone can make them!

Zùsto Vanillekoekjes

Ingredients

For 30 pieces
  • 225 g flour
  • 150 g butter, cut into small pieces, at room temperature
  • 125 g of Zùsto
  • 1 vanilla pod or a few drops of vanilla extract
  • Petit plus
  • Add as many chocolate chips as you like
  • Chocolate drizzle: dark and milk chocolate

Preparation method

  1. Preheat oven to 180 degrees
  2. Sift the flour into a large bowl, add the sugar and vanilla sugar and mix.
  3. Then add the butter and knead the mixture with your fingers until you can form a firm ball of dough.
  4. If you want delicious chocolate chips in your cookies, add them to the dough.
  5. Sprinkle your work surface generously with flour and roll out the dough to about 1 to 1.5 cm thick. Cut out the cookies using a cookie cutter of your choice. I simply used a small circle.
  6. Place a sheet of baking paper on a baking tray and place the biscuits on it. Bake the biscuits at 180°C for 12 to 15 minutes. When they are golden brown, they are ready (check at 12 minutes to make sure they don’t burn).
  7. Finish them by drizzling chocolate on top once the cookies have cooled.
  8. To make the chocolate drizzle, melt some dark chocolate in the microwave with a little milk until it is runny, then pour the hot mixture over the biscuits and leave to set in the fridge.
