VANILLA COOKIES WITH CHOCOLATE

Everyone loves shortbread biscuits. Just the smell they fill your whole house with—mmmm! You can do anything when you make them. Pimp them by dipping half the cookie in chocolate or mixing chocolate chips through the mixture.

They are easy to make and oh so delicious. If, for example, you want to treat everyone at work, school or a party, they’re easy and (almost) everyone loves the taste.

Ingredients

  • 225 g flour
  • 150 g butter, cut into small pieces, at room temperature.
  • 125 g Zùsto
  • 1 small bag of vanilla sugar

Extra

  • Add chocolate chips as desired
  • Chocolate drizzle: pure chocolate and milk

Method

  1. Preheat the oven to 180°C.
  2. Sift the flour into a large bowl. Add the sugar and vanilla sugar, then mix.
  3. Add the butter and knead the mixture with your fingers until you can form a firm ball of dough.
  4. If you would like delicious chocolate pieces in your cookies, this is the time to add chocolate chips to the mixture.
  5. Sprinkle your work surface with flour and roll the dough out into a single slab that’s approximately 1 to 1.5 cm thick. Use cookie cutters (in your choice of shape) to cut your cookies. I usually use a circle.
  6. Line your baking tray with a sheet of baking paper and place the cookies on it. Put it in the preheated oven. Check as from the 12-minute mark, and keep an eye on them to make sure they don’t burn. If they have a nice golden-brown colour, they’re ready .
  7. Finish with a chocolate drizzle as soon as the cookies have cooled.
    Make the drizzle by melting pure chocolate, with a splash of milk, in the microwave. You want a runny substance that you can pour over the cookies. It will cool and harden in the fridge.
