What is chocolate?
Real chocolate consists of a handful of ingredients: sugar, cocoa mass, cocoa butter, and/or milk powder – and often arranged in that order from large to small according their presence.
On average, the sugar content of dark, milk, and white chocolate is 48%, 52%, and 59%, respectively.
The darker the chocolate, the higher the cocoa mass and therefore the lower the sugar content.
For some applications (such as compound chocolate), there are deviations from the standard recipe of real chocolate where cocoa butter is replaced by cheaper fats/oils, and/or where (even) more sugar is added. This may be to reduce the price of the chocolate or functionally because this will raise the melting point and may even make the chocolate bake stable. One often finds this chocolate as a filling in cookies or as a coating on pastries.
Why we developed this product?
Research has shown that the average consumer consumes about 9.1kg of chocolate annually. This amounts to about 4.5kg of sugar per year, or 18,000 calories.
On the other hand, cocoa (major ingredient of chocolate) offers a lot of health benefits. For example, cocoa is packed with antioxidants, which can have a beneficial effect on the cardiovascular system, and stimulate a higher metabolism, etc. Cocoa also naturally contains a lot of minerals such as magnesium, copper and iron. These have a stress relieving effect, and stimulate oxygen levels in your blood, and energy levels in your body. Moreover, cocoa contains a lot of happiness hormones, as well as the components that are converted by the body into happiness hormones. Cacao is a “superfruit,” so to speak, and as a cherry on the cake, an excellent aphrodisiac.
Because the high sugar content is in such stark contrast to the health benefits of cocoa, we developed this healthy chocolate with Zùsto to enjoy indulgence without guilt.
With the Zùsto chocolate callets, we do not only try to stop excessive sugar consumption (and the consequences linked to it), but also to make it a positive and healthier story, because of the high & diversified content of healthy fibers: by using Zùsto, our dark and milk chocolate contains respectively no less than 34% (instead of 7%) and 24% (instead of 3.4%) healthy fibers. That’s about 5 to 7 times more than its sugar variant!
