Caramel is almost completely made of sugar. Unhealthy, but oh so yummy. Thanks to Zùsto, for the first time ever, you can now make caramel that is completely sugar-free. Delicious when added to a dessert or to just eat with a spoon.

Put a steel pan with water on the stove and bring it to the boil. Add Zùsto gradually to avoid any clumping. The Zùsto needs to be completely covered by the water. Heat the mixture until it begins to bubble and slowly change colour.
Note: Don’t stir the mixture during this process. The caramel needs to develop a nice, full, brown colour. Make sure that it isn’t too dark; that means it’s burnt and will have a bitter taste.
When you’ve reached the right brown colour, add the butter as quickly as possible. Stir for 1 to 2 minutes until the butter has dissolved completely.
Carefully add the whipped cream. Be careful because the mixture might spit when you add a cold liquid to it. Stir for no more than 1 minute until it is well mixed. Turn the heat off.
Take the caramel off the stove and add salt to taste. Let your salted caramel cool. Then, either devour it or store it in the refrigerator.
