Courgette brownies

Holy moly, these courgette brownies are truly scrumptious! They are creamy, just like you want from a brownie, but not too much. They are also deliciously chocolatey and sweet, without being too sweet… and it’s always good to know they are a healthier version!

Ingredients

For 16 brownies
  • 250 g Zùsto
  • 120 ml sunflower oil
  • 2 eggs
  • 260 g pastry flour
  • 60 g cocoa powder, unsweetened if desired
  • 1.5 tsp bicarbonate
  • a pinch of salt
  • 460 g grated courgette
  • 100 g dark chocolate, coarsely chopped

Equipment

  • Bowl
  • Baking paper
  • Baking mould

Preparation method

  1. Preheat the oven to 180°C.
  2. Beat the Zùsto with the eggs. Add the sunflower oil and mix well.
  3. Press out excess moisture from the courgette and add the courgette.
  4. Then add the flour, cocoa powder, bicarbonate of soda, and salt and mix to a smooth batter.
  5. Put the batter in a greased and floured 23×23 cm baking tin (put a sheet of baking paper on the bottom if necessary). Bake for 30 minutes.
  6. Allow to cool, refrigerate for another 2 hours, cut into 16 pieces and serve.
