Elderflower Syrup

The elder is related to the honeysuckle. The shrub grows in the wild along the side of the forest or along roads. In the summer you can pick elderflowers. To separate the blossoms from the umbels, leave them covered in a warm place for a while. The flowers open and fall from the screens. You can mix the blossoms in pancake batter or you can fry them as fritters. Elderflower tea promotes sweating and is therefore recommended for flu or colds with fever.

Ingredients

For 1 liter
  • 1 l water
  • 1 kg Zùsto
  • 2 sterilized weck jars
  • About 30 blossoms
  • 2 (organic) lemons in slices

Equipment

  • Weck jars
  • Cooking pot
  • Sieve
  • Muslin cloth

Preparation method

  1. Heat 1 l of water with 1 kg of Zùsto without boiling.
  2. Add about 15 blossoms (stripped of stems in a pot together with 1 sliced ​​lemon. Variations are possible (eg rose petals, ginger, star anise).
  3. Close the weck jar and let the syrup rest for 48 hours.
  4. Strain the mixture 2 to 3 times through a muslin cloth until you obtain an amber-colored liquid.
  5. Pour them into sterilized bottles.
  6. Close bottles tightly and turn them upside down so that they can evacuate. Important to keep well.
