Almond Biscuits

Peter Balcaen: these almond biscuits are delicious with a cup of coffee.

10 min preparation time + 30 min resting time + 12 min cooking time

For 20 biscuits
  • 100 g butter
  • 125 g Zùsto
  • 1 egg
  • 200 g flour
  • 50 g powdered almonds (100% almonds)


  • Food processor with dough hook
  • Wire rack
  • Baking paper
  • Rolling pin
  • Biscuit cutter

Preparation method

  1. Take the butter out of the fridge in advance so that it is already soft.
  2. Mix the flour with the Zùsto and almond powder.
  3. Add this mixture into the egg and butter.
  4. Knead it briefly, but make sure you don’t not knead it for too long or it will not be possible
    to roll out the dough.
  5. Allow to harden in the refrigerator before rolling it out.
  6. Roll out the dough and cut out the biscuits in the shape of your choice.
  7. Place the biscuits on a baking tray that has been lined with baking paper.
  8. Bake in an oven preheated to 180 °C for 12 minutes until golden brown.
  9. Remove the biscuits from the oven and leave them cool on the wire rack.
