An eclair, sometimes called a sjoeke or choeke in Flanders. Delicious with a cup of coffee!

The dough

  • 125 ml water
  • 55 g butter
  • 70 g flour
  • 3 eggs 
  • Half tsp Zùsto
  • 1/4 tsp salt

The filling

  • 500 ml milk
  • 75 g Zùsto
  • 50 g pudding powder

The finishing touch

  • Zùsto callets milk or dark (your choice)


  • Saucepan
  • Piping bag
  • Baking tray
  • Wire rack

Preparation method

The dough

  1. Bring the water in a saucepan together with butter, Zùsto and salt to a boil.
  2. Add the flour and mix well until you have a smell of cookie dough.
  3. Remove the pan from the hob and add the eggs 1 at a time, mixing well until obtaining a soft texture.
  4. Put the dough in a piping bag and pipe the eclairs onto a baking tray
  5. Bake at 180 degrees for 35 minutes.

The filling

  1. Dissolve a little milk with the pudding powder.
  2. Bring the rest of the milk to a boil with the Zùsto and now add the dissolved pudding powder.
  3. Let boil for a moment.

The finishing touch

  1. Melt the Zùsto chocolate in bain marie.
  2. Fill the eclairs with the filling and work with Zùsto chocolate.
  3. Allow it to cool on a wire rack.
