Preparation method
The dough
- Bring the water in a saucepan together with butter, Zùsto and salt to a boil.
- Add the flour and mix well until you have a smell of cookie dough.
- Remove the pan from the hob and add the eggs 1 at a time, mixing well until obtaining a soft texture.
- Put the dough in a piping bag and pipe the eclairs onto a baking tray
- Bake at 180 degrees for 35 minutes.
The filling
- Dissolve a little milk with the pudding powder.
- Bring the rest of the milk to a boil with the Zùsto and now add the dissolved pudding powder.
- Let boil for a moment.
The finishing touch
- Melt the Zùsto chocolate in bain marie.
- Fill the eclairs with the filling and work with Zùsto chocolate.
- Allow it to cool on a wire rack.
