Ingredients

  • 80 g soy margarine (or other)
  • 80 g of Zùsto
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 150 g spelt flour
  • 1/4 teaspoon baking powder
  • A touch of salt
  • 150 g of mixed nuts, seeds and dried berries

Preparation method

  1. Mix the flour, the Zùsto and the baking powder, then add the softened margarine, the vanilla extract and an egg.
  2. Once everything is well mixed, add the salt and the mixture of nuts, seeds and dried berries.
  3. Make balls of the same size and weight and place them on a baking tray lined with baking paper and bake for 25 minutes in the oven at 180°C. Then leave them to cool directly on a cooling rack. One biscuit is more than enough as a snack in picnic or lunch boxes.

Enjoy this sugar substitute and enjoy the delicious taste. It also gives your cookies a lovely brown colour.

About Katrijn

Katrijn Debruyne is an enterprising young mother of two toddlers who love to cook with them.

A quick and healthy cooking style that is adapted to children forms the heart of her blog. Her children will always play a role in the kitchen and with mum’s help, they are the chefs of the future!

Katrijn has gained a lot of knowledge from her training as a nutritionist, and she also gives practical cooking tips that will help everyone to improve, cooking healthier meals both with and for the family.

In Zùsto, I finally found a product that gives a sweet taste without sugar peaks. Most of all, though, I’ve found a Belgian product without a strange after-taste and one that maintains a nice brown colour when used in baking.

Another advantage for me is that you don’t need to do any conversions since the volume is the same as for sugar. This makes it easier to prepare quick and healthier meals with the kids.
