Sugar-free speculaas

Speculaas can be found in stores a lot, especially around the time of St. Nicholas. But it’s also delicious with your coffee. And did you know that speculaas is actually not that hard to make. And it’s great fun to make with the kids.

Ingredients

For 16 cookies
  • 150 g pastry flour
  • 50 g almond flour
  • 1 tsp baking powder
  • 30 g almond flakes
  • 80 g Zùsto
  • 2 tsp speculaas spices
  • Pinch of salt
  • 70 g hard margarine (lactose-free)
  • 20 g unsweetened almond milk

Equipment

  • Cling film
  • Rolling pin
  • 1 mixing bowl
  • Cookie cutter optional

Preparation method

  1. Place all dry ingredients in a mixing bowl (pastry flour, almond flour, baking powder, almond flakes, Zùsto, speculaas spices and salt). Mix with a spoon.
  2. Add the margarine cut into small cubes and then add the almond milk.
  3. Knead with your hands into a firm ball. Wrap the dough ball in cling film and leave it in the fridge overnight.
  4. Take the dough out of the refrigerator 10 min in advance. Line a baking tray with baking paper and preheat the oven to 180 °C.
  5. Knead the dough a little more with your hands so that it becomes a bit softer.
  6. Dust the countertop and rolling pin generously with flour. Roll the dough to just under half a cm thick and cut out the shapes (+/- 25 g of dough). Don’t you have a mold? Then cut out little squares with a pizza cutter or knife.
  7. Place the cookies on the baking sheet and bake for 10 to 15 min until golden brown.

My son’s diabetes led me to discover Zùsto and since then, Zùsto has been my favourite sugar substitute!
