Banana blueberry muffins

Zùsto Bananenmuffins met bosbessen

Ingredients

For 9 muffins
  • 250 g self-raising flour
  • 150 g of Zùsto
  • 1 teaspoon of baking powder
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon nutmeg
  • 1 pinch of salt
  • 1 egg
  • 150 g banana purée (about 2 small bananas)
  • 70 g milk
  • 120 g sunflower oil
  • 100 g blueberries (frozen or fresh)

Preparation method

  1. Pour the flour, Zùsto, baking powder, cinnamon powder, nutmeg and salt into a bowl.
  2. In a separate bowl, combine the egg, mashed bananas, milk and sunflower oil.
  3. Mix with a whisk until you obtain a smooth mixture.
  4. Add the wet ingredients to the dry ingredients and mix briefly with a spatula or wooden spoon (tip: if you want your muffins to have a sandy consistency, don’t mix too much)
  5. Finally, add the blueberries.
  6. Pour the batter into paper muffin tins and bake the muffins for about 25-30 minutes in a preheated 180 degree oven.

Tip: they are so delicious when they’re warm!
