Bread cookies

You’ll recognize the scenario – you buy bread, eat it occasionally, and then after a few days it doesn’t taste fresh anymore. So, I’d like to introduce my new favorite. Bread – cookies A combination of stale bread, almond flour, Zusto and your favorite chocolate. Plus, it’s a zero waste bake! Make sure you try this one out!

Ingredients

For 15 cookies
  • 100g butter
  • 100g flour
  • 25 g almond flour
  • 100 g Zusto
  • 150 g stale bread
  • 1 egg
  • 1/2 tsp baking powder
  • 75 g chocolate (your favourite)

Equipment

  • Blender

Preparation method

  1. Preheat the oven to 130°C.
  2. Cut the bread into pieces and leave it to dry out in your oven for 30 mins.
  3. Grind the stale bread into a powder using the blender.
  4. Mix the bread powder with the flour, almond flour, Zusto and baking powder.
  5. Add the butter and egg and mix everything together.
  6. Now, add chunks of your favourite chocolate. 
  7. Roll the dough into a sausage shape (wrapped in cling film) and leave to rest in the refrigerator for a while.
  8. Preheat your oven to 180 degrees.
  9. From your sausage, cut cookies 1 cm thick and space them out on the baking tray.
  10. Bake the cookies for 12 minutes in the oven.

I’m Joeri Sterckx and I was born on the last car-free Sunday of 1973. And just like my parents had to be creative to get to the hospital, I now enjoy getting creative in the kitchen!

Cookies, or “gateaux” as we call them here at home, are one of our family traditions. Every celebratory occasion is a reason to have one… And every occasion deserves a celebration! That’s why I’m convinced I inherited my passion for desserts at an early stage.

My background is that I’m a preschool teacher, but I currently work as a pedagogical supervisor where I support teams in putting together powerful and meaningful teaching sessions.

The rest of my time is spent being a dad to Rune and Tejo, and having lots of fun and laughter.
