Carrot cake

Carrots, we know them raw, on the go or grated in a salad. Boiled, baked or steamed. But they can also be used in a dessert. Delish!

For the cakes 

  • 300 g grated carrots
  • 150 g flour of your choice
  • 1 tsp cinnamon 
  • 1 tsp baking powder 
  • A pinch of salt
  • 90 g olive oil 
  • 35 g sunflower oil 
  • 2 eggs 
  • 170 g Zùsto


  • 200 g cream cheese 
  • The juice of half a lemon.
  • 16 g Zùsto


  • Baking pan of 20cm diameter
  • Grater
  • Kitchen robot 
  • Whisk
  • Bowl
  • Piping bag with nozzle (optional)

Preparation method

  1. Preheat the oven to 170 °C.
  2. Beat the eggs with the olive oil, sunflower oil, cinnamon, salt and the Zùsto until firm.
  3. Sift the flour and baking powder.
  4. Now add the grated carrots.
  5. Add the mixture into the baking tin and bake in the oven for 45 minutes.

For the topping

  1. Stir the cream cheese until soft with a whisk.
  2. Add the juice of the lemon.
  3. Now we can add the Zùsto.
  4. When the carrot cake has cooled, we can finish the topping according to our own creation.
