Healthy banana bread

From the cookbook Strak Plan 2

For this recipe, brown bananas are the best choice because they are sweeter in taste. This is because during the ripening process, enzymes convert the starch into sugars.

Ingredients

For 6 people
  •  3 ½ bananas
  •  150 g whole wheat flour
  •  1½ tsp baking powder
  •  3 eggs
  •  pinch of salt
  •  3 tsp Zùsto
  •  10 walnuts, finely chopped
  •  pinch of cinnamon

Equipment

  • Oven 
  • Mixing bowl
  • Baking paper
  • Cake tin

Preparation method

  1. Heat the oven to 180 degrees.
  2. Put all ingredients together in a bowl and mix until smooth. It is best to crush the banana in advance with a fork. Cut 1 banana in half lengthwise. Keep 1 half separate.
  3. Place a sheet of baking paper in a cake tin. Carefully pour the mixture into the cake tin.
  4. Place the other half of the banana on top of the cake mixture. Put in the oven and bake for about 50 minutes at 180°C.
  5. Prick the centre of the cake with a knife to see if it is cooked. Remove from the oven and allow to cool. 

Enjoy!

Tip: serve with some extra yogurt, cheese, quark, etc.
