Orange Ricotta Cake

I am a fan of Ricotta!!! I love it in food (think cannelloni with ricotta and spinach mmmmm), but I also enjoy it in desserts. It gives your pastry extra creaminess… and that’s what makes it so particularly delicious. For this recipe for an Orange Ricotta Cake, I used Zùsto as the sweetener.

Ingredients

For 12 servings
  • 200 g self-raising flour
  • 175 g Zùsto
  • a pinch of salt
  • 120 g hard margarine or butter
  • 250 g Ricotta
  • 1 tsp vanilla extract
  • 3 eggs
  • zest of 1 orange
  • 5 tbsp freshly squeezed orange juice

Equipment

  • Round baking tin (preferably a spring form) of +/- 18 cm 
  • Grater (for the zest) 
  • Citrus juicer (for the juice of the orange)

Preparation method

  1. Preheat the oven to 180°C. Grease a round baking tin of +/- 18 cm diameter with some margarine and dust with flour.
  2. In a mixing bowl, put the self-rising flour together with the Zùsto and the pinch of salt.
  3. In another mixing bowl mix the butter until soft. Add the ricotta and continue mixing.
  4. Add the eggs 1 by 1 and mix after each addition. Add the vanilla extract, the orange juice and the zest of the orange.
  5. Finally, add the dry ingredients to the ricotta mixture and mix to a smooth batter.
  6. Pour the batter into the tin and bake in the oven for +/- 35 min. Check if the cake is baked properly by pricking it once with a cake stick, satay stick or fork. If this comes out clean, then the cake is ready. Don’t worry, the cake won’t dry out easily because of the ricotta.
