Oven-baked pancakes

Peanut butter (known as Pindakaas in Dutch, which literally means peanut cheese) is definitely not a cheese! Peanut butter are ground peanuts, which makes peanut butter a high-fat product. The fat content comes from the peanuts. This does mean, though, that these are the right type of unsaturated fats. Take note! Many peanut butter spreads on the market are “enriched” (with sugar, hydrogenated fats, etc. ). Make sure you select as pure a peanut butter as possible!

Ingredients

For 10 servings

Dough

  • 500 g whole wheat flour
  • 2 tsp baking powder
  • a pinch of salt
  • 5 tbsp Zùsto
  • 340 ml semi-skimmed milk (or plant-based drink)
  • 4 eggs

Topping

  • 250 g frozen raspberries
  • 5 tbsp Zùsto
  • 10 tbsp peanut butter, almond paste, etc.

Equipment

  • Mixing bowl
  • Oven dish of approx. 13 cm by 22 cm
  • Oven

Preparation method

  1. Preheat the oven to 180° C.
  2. Mix all the ingredients for the dough into a smooth batter. Pour into the baking dish (pancake may be about 5 cm thick).
  3. Topping: defrost the raspberries and mash them.
  4. Add the Zùsto and make your own raspberry compote!
  5. Spread the raspberry compote and peanut butter over the batter and place in the preheated oven at 180°C for 15 min. Enjoy!

Tip: serve with some extra fruit and/or yogurt, quark, etc.
