Plattekaas and passion fruit ice cream

In the Sterckx house, ice cream season has begun. There’s always time for a scoop of ice cream. Since I decided to try out all the ice cream parlours in Rome a few years ago, I almost can’t find a “regular” ice cream flavour. 

We’re kicking off the new season with a new flavour: cream cheese combined with passion fruit. The taste of summer in one mouthful!

For 8 people
  • 3 eggs 
  • 175 g Zùsto
  • 200 ml cream
  • 250 g full-fat cream cheese
  • 65 g passion fruit


  • 2 bowls
  • Ice cream machine

Preparation method

  1. Beat the eggs vigorously with the Zùsto.
  2. In another bowl, whip the cream until peaks form.
  3. Combine the egg mixture, cream peaks, passion fruit, and cream cheese until everything is combined.
  4. Run the ice cream machine until the ice cream is ready

I’m Joeri Sterckx and I was born on the last car-free Sunday of 1973. And just like my parents had to be creative to get to the hospital, I now enjoy getting creative in the kitchen! 

Cookies, or “gateaux” as we call them here at home, are one of our family traditions. Every celebratory occasion is a reason to have one… And every occasion deserves a celebration! That’s why I’m convinced I inherited my passion for desserts at an early stage. 

My background is that I’m a preschool teacher, but I currently work as a pedagogical supervisor where I support teams in putting together powerful and meaningful teaching sessions. 

The rest of my time is spent being a dad to Rune and Tejo, and having lots of fun and laughter.
