Quark pancakes

From the cookbook Strak Plan 2

Flour can never be whole wheat because with flour, the bran and germ are sifted out of the flour, so only the flour core remains. Wholemeal flour makes use of the full grain: the flour kernel, bran and germ. These components contain beneficial nutrients such as fibre which, among other things, ensures proper bowel function.

Ingredients

For 2 people
  • 70 g wholewheat spelt flour
  • 250 g quark (flavoured e.g. Hipro vanilla from Danone or Alpro absolute coconut)
  • 2 eggs
  • 2 to 3 tbsp Zùsto
  • Fat for frying (e.g. peanut oil)
  • Fruit to finish (apple in the microwave with some cinnamon, blueberries, banana, etc. – it’s your choice!)

  • Mixing bowl
  • Frying pan

Preparation method

  1. Mix all ingredients except the fat in a mixing bowl. Make sure the wholewheat spelt flour is dissolved in the quark and eggs.
  2. Heat a frying pan with a very small amount of oil or cooking margarine, etc. Put some of the batter in the pan and make pancakes that are about 5 cm in diameter. Fry until light brown on both sides. Enjoy!

Tip: serve with some extra yogurt, cheese, quark, etc.
