Soft waffles – The granny waffles

There’s nothing like homemade waffles! Not to mention the exquisite smell that fresh waffles spread throughout the house.
You have them in all shapes and sizes. These are the one and only soft waffles according to Vincent’s grandmother’s recipe.

At your request, I reworked this recipe with Zùsto, so everyone can eat HUGE amounts of it.
I’d like to share another big secret before you get started: in our home, we eat the first waffles warm with a layer of waffle dough on top. It’s so good! You don’t have to adopt this tradition but I can assure you, it’s addictively delicious!

Ingredients

For 12 pieces
  • 215 g butter (room temperature)
  • 215 g plain flour
  • 3 eggs 
  • 170 g Zùsto
  • A few drops of vanilla extract

Equipment

  • Waffle iron
  • Food processor

Preparation method

  1. Separate the eggs.
  2. Mix the egg yolks with the butter. Mix everything together well.
  3. Mix the flour and Zùsto together and combine with the egg/butter mixture until smooth.
  4. Now add a few drops of vanilla extract.
  5. Beat the egg whites until stiff and lightly fold them into the mixture.
  6. For flavour, let it rest in the fridge for a few hours.
  7. Turn on your waffle iron and start baking!

I’m Joeri Sterckx and I was born on the last car-free Sunday of 1973. And just like my parents had to be creative to get to the hospital, I now enjoy getting creative in the kitchen!
