Coconut cake

When you think of summer, you also think of coconuts. Very tasty and fresh, now combine that with a cake, and you get the perfect dessert to enjoy with your coffee.

  • 200 g Zùsto
  • 100 g butter
  • 200 g self-raising flour
  • 50 g dried coconut + extra to sprinkle over the cake (optional)
  • 2 eggs
  • 125 ml (coconut) milk
  • 2 tbsp lemon zest (optional)


  • Baking mould
  • 2 bowls

Preparation method

  1. Preheat the oven to 170 °C or 150 °C for fan ovens.
  2. Grease the baking mould and cover with baking paper.
  3. Soak the coconut in the milk 2 hours in advance.
  4. Mix the Zùsto with the flour.
  5. Now mix the butter, eggs, lemon zest, milk and coconut together into the flour mixture. 
  6. Bake for 1 hour.
  7. Place the cake on a wire rack for 10 minutes before removing it from the baking mould.
